Indian Spiced Beet Salad with Mimosa Yogurt Dressing


3 tablespoons, il Fustino Mimosa Vinegar
2 cloves, minced garlic
1/2 cup, greek yogurt
1/3 cup, il Fustino Arbequina EVOO
1 teaspoon, dried dill
salt and pepper - to taste

2 bunches, spinach
1/2 red onion - sliced
1/2 cup, garbonzo beans - canned
1/4 cup, Indian Spiced Beet Spread
1/2 cup, feta cheese


  1. To a mixing bowl add il Fustino Mimosa Vinegar, minced garlic, greek yogurt, il Fustino Arbequina EVOO, dried dill and salt and pepper. Whisk until combined. Set aside.
  2. Build your salad with spinach, red onion, garbanzo beans and feta cheese. Add small spoonfuls of the Indian Spiced Beet Spread.
  3. Drizzle some of your Mimosa Yogurt dressing over your salad and toss to combine.
  4. Enjoy!
